Yup, always do.  The reds I made have all dropped clear, but had slightly higher acid, leading me to believe that the Niagaras might be on the high side pH wise.

Did you treat with Pectic Enzyme before fermenting ?

Recently I used isinglass to clear my dry Niagara, but it seems the isinglass was bad because it took a long time to fall to the bottom and now the wine is cloudier than before - really weird.  Maybe my Niagara is high-pH, though I don't have equipment to measure that - I only go by colour, and Niagara should be picked before they lose their pale green colour or the pH will likely be high based on what I've been told.  Short of filtration, what other finings might work in such a case?
