Ron,

Freeze them. Thaw them out. Mush them up and add enzyme, water and sugar to 
get to the alcohol level and fruit concentration you want. Get as much of 
the pulp out as soon as possible. Strawberries are not grapes. Seeds 
contribute to bitterness. Ferment quickly and clarify quickly to obtain the 
cleanest strawberry fruit on nose and taste
