Hi Laura, the easiest method is to use oak spirals, you attach a fishing 
line and suspend it in the middle of the wine, they are much easier to 
remove than chips and in your case I would suggest French oak. 1 spiral is 
recommended for a 20 L carboy for 6-8 weeks, but you should always taste 
periodically so that you don't overoak
