Hi Laura,
Since you have 2 cbys, I would try each with a different oak. One with
French, one with American. Add 2 gm of toasted oak chips / L of wine. They
will sink to the bottom in a few weeks, so not to worry. I would sample
every couple of weeks. My experience with oak is that if you bottle it when
you think it is just right,,,,,,,,,,,,you will open a bottle several months
later and wonder where the oak went. It is a touch tricky, but take the oak
level just above where you think that you like it. Bottle and put away for a
few months. Should be a winner at Growwine competition. Kick L's butt......
